How the Five Compare on the Numbers
A fluted tube pan has more surface touching the cake than anything else in a kitchen, so release is the specification and everything else follows from it. Three of these five answer with a coating. Two answer with bare stainless steel, and one of those two publishes the highest oven ceiling on the page.
The coated picks each name what their coating leaves out, and the three lists differ: PFAS and PTFE, PFAS alone, and BPA with PTFE and PFOA. None of the three publishes a thickness or a number of coats, so the only guide to how long a coating lasts is the care instruction printed beside it, and only one listing prints one.
What the table cannot settle is how a cake leaves a pan with no coating on it. Both stainless picks describe a finish, a seam or a removable base, and neither states that the pan should be buttered and floured. That is the one instruction a first time buyer of an uncoated tube pan actually needs.
Three Coatings, Three Different Lists
Nordic Ware Names the Coating Material
Nordic Ware is the only listing here to say what its nonstick is made of rather than what it is not: a premium silicone nonstick, stated to be made without PFAS and PTFE, over cast aluminum. It argues the casting matters as much as the coating, since cast aluminum takes the crisp, intricate detail a fluted pan is bought for and conducts heat evenly for controlled browning.
It publishes the fullest set of sizes too: 10.5 inches in diameter, 3.8 inches high, and a 12 cup capacity, at 1.8 lb, made in America of domestic and imported materials. What it never publishes is an oven temperature, or a washing instruction, or anything about utensils, which on the heaviest and most coated pan here is a strange set of omissions.
Tuvonirzo Publishes the Rules Instead of the Recipe
Tuvonirzo names three substances its coating is free of, BPA, PTFE and PFOA, and then does the thing the other two coated picks do not: it tells you how to keep the coating. Wash with warm water and a mild, non abrasive detergent before first use. Never heat the pan when empty. Use wooden or plastic utensils.
Those three sentences are worth more than any free from list, because they describe the ways a coating actually dies. The pan itself is 9.5 inch carbon steel, oven safe to 450 degrees F, dishwasher safe, at 0.79 lb, with a coating the maker calls an elegant gray. It publishes no capacity and no depth in words.
The Coated Pan With Handles, and a Field That Cannot Be Right
Wilton Publishes a Diameter and a Depth
Wilton publishes 9.49 inches in diameter and 3.37 inches deep, a premium nonstick coating made without PFAS, heavy duty aluminum described as scratch resistant and warp resistant, oven safety to 450 degrees F, a dishwasher rating and extended handles. At 0.71 lb it is the lightest pan on this page.
Its dimension fields read 10.14 by 10.14 by 1.16 inches. The first two figures are plausible as an outside diameter. The third cannot be a pan its own bullet calls 3.37 inches deep, so this page uses the sentence and reports the field. Extended handles are the feature the other coated picks lack and the reason a full pan comes out of an oven safely.
What the Coated Three Have in Common
All three publish a free from list and none publishes a coating thickness, a number of coats or a scratch test. Two publish a 450 degrees F ceiling and one publishes none. Two publish a dishwasher rating and one of those also bans abrasive cleaners. Between them they cover the coating question from three angles and leave the same hole in the middle.
For a baker the practical consequence is that a coated bundt pan is a consumable. The listing that admits it, by publishing utensil and empty heating rules, is telling you more than the listing that calls its coating scratch resistant and leaves it there.
The Two Pans With Nothing On Them
Fox Run Publishes 572 F and a Removable Bottom
Fox Run is stainless steel with no coating, and it publishes the highest oven figure in this pool: usable at temperatures up to 572 F. With nothing to peel or scorch, that ceiling is a property of the metal. It is a two piece pan at 10.87 by 5 inches with a removable bottom, stated to make a 10 inch cake, hand wash and dishwasher safe, at 1.4 lb.
The removable bottom is the release mechanism. Instead of relying on a surface, the base separates from the walls so a delicate cake can be lifted rather than turned out. The cost is a seam, which a thin batter can find, and the listing never mentions greasing the pan.
E-far Publishes 16 Cups and One Piece
E-far takes the opposite position on the seam: single piece design with no worries about batter leaking through the bottom, in premium food grade stainless steel, mirror finished for release. It states plainly that it is unlike aluminum and Teflon coated pans and will not oxidize. Oven safe to 450 degrees F, dishwasher safe, 1.55 lb.
It publishes the largest volume here, 16 cups, at 10 by 4 inches, and one detail nobody else offers: the center cone stands 1 inch higher than the sides, so the pan can be inverted on the cone to cool an angel food cake. Its dimension fields, 5.6 by 10.8 by 10.4 inches, put the height figure first and are reported rather than used.
Which One Fits Your Kitchen
The crispest fluted detail. Nordic Ware, cast aluminum at 10.5 inches in diameter and 3.8 inches high with a 12 cup capacity, under a premium silicone nonstick made without PFAS and PTFE, at 1.8 lb, with no oven figure published.
Lifting a full pan safely. Wilton, heavy duty aluminum at 9.49 inches in diameter and 3.37 inches deep with a nonstick coating made without PFAS, extended handles, oven safe to 450 degrees F and dishwasher safe, at 0.71 lb.
Keeping a coating for years. Tuvonirzo, a 9.5 inch carbon steel pan with a coating free of BPA, PTFE and PFOA, oven safe to 450 degrees F, and the only listing here that publishes a utensil rule and an empty heating warning.
An oven hotter than a coating allows. Fox Run, a two piece stainless pan at 10.87 by 5 inches with a removable bottom, stated usable to 572 F, hand wash and dishwasher safe, making a 10 inch cake, at 1.4 lb.
The biggest cake with no coating at all. E-far, single piece food grade stainless steel at 10 by 4 inches with a 16 cup capacity, mirror finished, with a center cone 1 inch higher than the sides, oven safe to 450 degrees F, at 1.55 lb.
What We Could Not Verify
Every figure above comes from the maker’s own listing text. These are the things we went looking for and could not source in any of them.
- No listing publishes a coating thickness or a number of coats.
- Nordic Ware publishes no oven temperature and no washing instruction.
- Neither uncoated pan says whether it should be greased before use.
- Three of the five publish no capacity in cups.
- Wilton’s dimension fields give 1.16 in where its own bullet gives 3.37 in.
- Only one of the three coated picks publishes any rule for protecting the coating.
