If the constraint is height, Mixpresso is the one to take at 6 inches, since Airscape is 7 inches, Ohtomber 7.24, HB Design 7.8 and Veken 8.9. HB Design is the only square canister, and its own bullet argues that a square sits flush against a wall where a circle leaves gaps.
A one way valve lets carbon dioxide leave a sealed canister without letting air back in, which Mixpresso, Ohtomber and Veken all rely on. Airscape instead pushes an inner lid down onto the beans, and a two way valve on that plunger lets the trapped air out as it descends, so the headspace is physically removed. A valve is passive and needs nothing from you. A plunger has to be pushed down again every time the level drops.
Four of the five claim to. Veken is the most specific, calling its design window free so no sunlight reaches the beans at all. Ohtomber is the only listing that behaves as though it does, and it includes four replacement valves in the box alongside a 30 ml scoop. That is a quiet admission that the valve is a membrane and membranes clog, stiffen or stop sealing. Mixpresso and Veken both rely on a one way valve and mention no spare and no service life. Nobody in this pool publishes how long one is expected to work.
It is the only feature here that changes what you do. Coffee three weeks past opening tastes different from coffee three days past, and nothing about a sealed steel canister tells you which you have. The AirScape Kilo is worth one more sentence, because its published weight is 2.2 pounds and that figure is lifted straight out of its own title, where it describes how much coffee the canister holds. It is not the weight of the canister. Every weight quoted below is a single empty container, which makes this one of the few pools where weight can be compared at all.
