How the Five Compare on the Numbers
Peels in this pool are sold as kits, and the kit is the reason to buy one over another when it is a first purchase. What arrives beside the peel is published clearly on four of these five, and it is worth reading before the blade size, because nothing else on the listing tells a beginner whether the box contains one tool or three.
One arrives with a rocker cutter and a second spatula. One arrives with a rocker cutter, a cover for it and a storage bag. One arrives with a rocker cutter and a sheet of PTFE non-stick cloth. One arrives with a stainless cutter wheel. One arrives with nothing at all, and it is the only wooden peel of the five.
The third row is the one a bread baker should notice. Every accessory published across these five is a pizza tool: two rocker cutters, a cutter wheel, a serving spatula and a non-stick sheet. Nothing in this pool arrives with a lame, a banneton, a scraper or a cooling rack, and no listing states a loaf length its blade will carry.
What the Box Actually Contains
Three Pieces, Twice Over
Sharmila publishes a complete three piece set of a metal peel, a rocker cutter and a spatula, and adds an elegant gift box. Leozzo also publishes three, but its third piece is unusual: a high temperature resistant PTFE baking non-stick cloth alongside a stainless steel rust proof rocker cutter. That cloth is the only accessory on this page that is used while the bread is baking rather than after.
Mooues sits between them with two tools and a bag. It publishes a rocker cutter with a cover, which no other listing here mentions, plus a storage bag it says gives you a second way of putting the peel away besides hanging it. Its packaging is described as a paper box shaped like a pizza box.
One Tool and One Instruction
KLAQQED publishes two pieces, the peel and a stainless steel pizza cutter wheel with a sharp roller, and names the pair as a gift. New Star Foodservice publishes one piece and says so plainly by never claiming otherwise: a basswood peel with a 16 by 14 inch plate, an 8 inch handle and a 24 inch overall length.
What New Star publishes instead is the only real care instruction on the page. It states hand wash only, and explains the material choice in the same breath: basswood has a fine even texture, is less prone to cracking, and is free of the secreting oils it says conventional pinewood peels put into food.
The Wooden Peel Against Four Metal Ones
Why the Material Changes a First Purchase
Four of these five are aluminum or aluminum alloy, and the fifth pair are wood: New Star’s basswood plate and Leozzo’s food grade wood plate on a reinforced handle. Mooues argues the case against wood in its own listing, saying wooden peel boards are prone to splintering and not resistant to moisture, and offering its rust resistant aluminum as the solution.
For bread rather than pizza that argument cuts both ways. Wet dough releases from a floured wooden surface more readily than from bare metal, and a wooden peel is the traditional tool for a loaf. Neither the wooden picks nor the metal ones publish a word about dough release, and only Leozzo supplies anything for it, in the form of its non-stick cloth.
Thickness and What Goes Under a Loaf
New Star publishes a tapered half inch blade, which is the only blade thickness described as tapered on this page. KLAQQED publishes 0.6 inches of thickness for its folded aluminum plate. Sharmila publishes a curved back edge stated to stop food sliding off during transfers, and Mooues publishes nothing about its edge at all.
That matters more for a loaf than for a pizza, because a proved loaf is softer and heavier than a pizza base and has to be slid under in one movement. The figures exist on two of five, the edge shape is described on two of five, and no listing in this pool connects either to bread.
Where the Figures Need Reading Twice
One Weight Published Twice and One Field Set Discarded
KLAQQED publishes 1.5 lb in its weight field and states 1.2 lb in a bullet, and this page uses the maker’s own sentence as the house rule requires. Its size field is stranger still: it reads Package Size 12.2 by 14.2 by 1.4 inches, so the only size field on the listing describes the carton rather than the peel.
New Star publishes dimension fields of 18 x 27 x 1 in against its own stated 16 by 14 inch plate and 24 inch overall length. A 27 inch field cannot be a peel the maker says is 24 inches end to end, so the fields are set aside and the sentence is used. Leozzo publishes a 0.1 inch third figure, which is not a plate anyone can slide under a loaf.
Folded, Extended, or Neither
Mooues and KLAQQED both publish two lengths, because both fold. Mooues states 12 by 14 inches folded and 12 by 25 inches with the handle extended. KLAQQED states 12 by 14 folded and 12 by 24 unfolded with an 11.5 inch handle. Sharmila folds too and publishes only one figure, at 12 inches.
New Star does not fold and publishes a single honest set: a 16 inch plate, a 14 inch width, an 8 inch handle and 24 inches overall. It is the only listing of the five where every published figure describes the peel in one state, which for a first purchase is worth as much as an extra tool in the box.
Which One Fits Your Kitchen
The beginner who owns no other tool. Sharmila publishes a three piece set of a peel, a rocker cutter and a spatula, at 1.7 lb, with a foldable wooden handle that detaches so the aluminum can be wiped with warm soapy water. It arrives in a gift box.
The beginner who wants somewhere to put it. Mooues publishes a storage bag and a covered rocker cutter beside a 12 by 14 inch aluminum plate that extends to 12 by 25 inches, at 1.55 lb. It is the listing that argues hardest against wooden peels.
The beginner working with wet dough. Leozzo publishes a wood plate, a stainless rocker cutter and a PTFE non-stick cloth, at 0.77 lb, the lightest of these five. Treat its 0.1 inch third field as unusable and go by the wood plate description.
The beginner who wants a drawer to close. KLAQQED publishes a 12 by 14 inch aluminum plate 0.6 inches thick that folds by loosening screws, an 11.5 inch solid wood handle and a stainless cutter wheel. It states 1.2 lb in a bullet against 1.5 lb in its field.
The beginner baking loaves rather than pizza. New Star Foodservice publishes basswood with a tapered half inch blade, a 16 by 14 inch plate, an 8 inch handle, 24 inches overall and 0.94 lb. No extra tools, hand wash only, and the only material argument on this page.
What We Could Not Verify
These are the things a first bread baking kit needs and this pool does not publish.
- Every accessory published across these five is a pizza tool, and nothing in the pool arrives with a scraper, a lame or a banneton.
- No listing publishes a loaf length or weight its blade is rated to carry.
- Only two of the five publish any washing instruction at all.
- KLAQQED publishes 1.5 lb in its field and 1.2 lb in a bullet and never reconciles them.
- New Star publishes fields of 18 x 27 x 1 in for a peel it states is 24 inches overall.
- No listing says anything about dough release, although one supplies a non-stick cloth for it.
